The Hellmann family has been cultivating its spirit of hospitality here for five generations now.
A story of family and passion
The bar is run by Jules Hellmann, who will be happy to recommend selections from the wine list, which features over 250 wines. Together with his grandson Pierre Hellmann, he tends the restaurant’s vegetable garden and orchard to supply the kitchen with local, seasonal produce.
Executive Chef Jean-Philippe Hellmann (Maître Cuisinier de France), along with his son Pierre Hellmann (Fédération des Chefs d’Alsace), carry on traditional family recipes such as Pot au Feu, the restaurant’s true “signature dish,” featuring its famous consommé with beef marrow quenelles as a starter (available every Saturday at lunchtime—by reservation).
Marie-Rose Hellmann handles the front of house and reservations, assisted by her granddaughter Anna Riva. They also oversee service in the Winstub section.

The Hellmann Chefs
Pierre carries on the family tradition alongside his father, Jean-Philippe, in the kitchen.
But before joining the team, he honed his skills at prestigious restaurants, notably at Le Bristol with Éric Frechon, at L’Auberge de l’Ill with Marc Haeberlin, and at Le Cheval Blanc with Pascal Bastian.
